Breaking the Cold Chain: Farther Farms Develops Room Temperature French Fries that Last 90 Days

The French fries can be stored for 90 days outside the fridge or freezer

Farther Farms, a food tech startup in the US, has developed a method that allows foods that normally have to be frozen or refrigerated to stay fresh at room temperatures. Their first product is a shelf-stable bag of French fries.

The cold chain. Microorganisms, which are the main cause of food spoilage thrive at room temperatures. We can extend the shelf life of some foods by keeping them cold.

To do that, the foods must be prepared, shipped, and stored along a temperature-controlled supply chain (a \”cold chain\”). The food can become unfit to eat if the cold chain breaks at any point.
