The food we eat is an unexpected weapon in the fight against cancer. It’s because certain nutrients in food play a key role in preventing the development of cancer.

Xiang Dong Wang is a senior scientist at Tufts and an associate director at the Jean Mayer USDA Human Research Center on Aging. He studies how foods can prevent cancer, especially lung, liver and colon cancer.

The rate of cancer is declining, but there are increasing concerns about the increase in liver cancer, both in terms of incidence and mortality, in the United States. This is partly due to an increase in non-alcoholic fatty liver diseases, obesity and diabetes.
