Cells multiply and divide, then mature. Muscle cells join to form muscle fibers while fat cells produce lipids. The nuggets can then be processed into sausages or burgers. Researchers are using biomaterials like plant cellulose to create scaffolds for meat cuts with connective tissue and blood vessels, such as chicken breast or steak. Many companies are developing more complex cultured products ranging from salmon to bacon.
Bloomberg reported that Future Meat plans to offer its products at US restaurants by the year’s end. But first, the FDA must approve the product. In addition to FDA approval, the public’s opinion will be another obstacle that the company and its rivals must overcome before they can see success. For every person opposed to factory farming there is someone who feels uncomfortable with the idea of eating meat produced in a bioreactor despite the fact that avian, bovine or porcine lives are spared. It will take education, a comparison of the taste/texture to’real’ meat, and competitive pricing to convince consumers to accept cultured meat.
