Six Tips to Reduce Carcinogenic Barbecue Risks
There’s no way, short of stopping your grilling, to avoid all AGEs, PAHs and HCAs when you enjoy a summer barbeque. There are still many things you can do this summer to reduce the risk of carcinogens while enjoying a smoked flavor.

Summer is scented with hickory, oak and charcoal. The smell of a campfire reminds me of fireworks, jumping in the sprinkler with kids from my neighborhood, and Dad grilling with a Blue Moon. Barbecue is a great pastime. Nothing will ever get it out of the red-blooded American’s hands, and especially not during the Fourth of July.
It’s also a problem because I am also interested in extending human life. I’m referring to the fire hazards that grilling can cause (or the $37 million in property damage caused by them every year). Carcinogens are the problem. Barbecue health risks are well known.
